Welcome to Safar, our home located in Maastricht’s historic center; where we share our Beiruti traditions with guests; where the passing of every plate sparks dialogue and weaves new connections.
Safar
comes from the Arabic word travel, the main inspiration for chef and owner
Zeina Haroun, who moved to the Netherlands from Beirut in 2020.
She carries with her the generosity and spontaneity that is characteristic of Beiruti dining, in addition to liters of olive oil, arak and pine nuts that fill her suitcase every trip.
Her project celebrates travel; the traveler in each of us, the explorer, the escapist, and that who seeks to express a hidden persona; as she morphed from her previous life into a chef, first attending culinary school in London, and then joining the reputable Michelin star chef Servais Tiellman at Beluga. Soon after, she launched Safar, the final chapter of Maison Haas Hustinx, a project that rose from 2 restored art deco buildings on the Vrijthof, which now house luxury hotel rooms and an exclusive spa.
Travel offers an opportunity to be someone new, to create free from social consciousness.
It turns the traveler into a good listener, as many find it easier to whisper secrets to those from a foreign land.
Along with colleague Calin Ratiu, they craft a menu combining fresh herbs and spices to create balance of flavor and texture in every dish, introducing a genuine Levantine experience to Maastricht diners. Dishes are designed for sharing, the only way Beirutis know. The restaurant celebrates the mixed heritage that has long shaped the eastern Mediterranean; Roman, French, Ottoman, among others and nestles it into the city of Maastricht, a city with an attitude of curiosity towards new experiences.
